Honey tends to crystallize, and if you often buy it from the beekeeper, you might notice that it turns hard over time. So, what we do is grind up big crystals into smaller ones to make the honey feel smooth and spreadable.

The creamed honey color tends to be lighter than the honey that was used originally. The reason why it turns white is the high amount of tiny glucose crystals. To make it whipped, we use the creamed honey mixer. The honey is placed on ice to avoid overheating and mixed until it gets its creamy texture. This way all the healthy enzymes and antioxidants are preserved.
